Nigiri translates to 'two fingers' and consists of hand pressed vinegared rice shaped into an elongated ball with a topping draped over it. Octopus (Tako) must be thinly sliced when prepared raw, as the flesh is quite chewy and rubbery. Best eaten after being dipped in soy sauce.
