Nigiri translates to 'two fingers' and consists of hand pressed vinegared rice shaped into an elongated ball with a topping draped over it. Bonito (Katsuo) is also known as Skipjack Tuna and is an important fish in Japanese cuisine. The flesh is a distinctive bright red and degrades quickly, so must be very fresh to be eaten raw. It is best consumed with soy sauce and wasabi.
