Nigiri translates to 'two fingers' and consists of hand pressed vinegared rice shaped into an elongated ball with a topping draped over it. Japanese Yellowtail (Hamachi), also known as Amberjack, is a fatty, pinkish-white coloured fish with a rich buttery flavour and high umami content delivering exceptional flavour. The belly cut (Toro) is considered the premium part of the fish and more expensive as a dish. Fish sold as Toro have been aqua farmed under strict and humane conditions to produce a much higher fat content flesh than wild-caught. This nigiri is delicious consumed with soy sauce and wasabi.
